Ingredients

  • Spinach - 200 grams
  • Paneer - 150 grams
  • Whole wheat burger buns - 2
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, finely chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon
  • Lettuce leaves - 2
  • Tomato - 1 medium, sliced
  • Cucumber - 1 small, sliced
  • Yogurt - 2 tablespoons (for topping)

Steps

  1. Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes until wilted. Drain and immediately transfer to cold water to retain the green color.
  2. In a pan, heat olive oil over medium heat. Add the chopped onion, garlic, ginger, and green chili, and sauté until the onion is translucent.
  3. Add the blanched spinach to the pan and mix well. Stir in cumin powder, coriander powder, garam masala, salt, and black pepper. Cook for another 5 minutes, then remove from heat.
  4. Crumble the paneer into small pieces and add it to the spinach mixture. Mix until well combined and let it cool slightly.
  5. Form the mixture into two patties, ensuring they are compact to hold their shape when cooked.
  6. In the same pan, add a little more olive oil and cook the patties on medium heat for about 4-5 minutes on each side until golden brown.
  7. Toast the whole wheat burger buns lightly on a separate pan or in the oven.
  8. Assemble the burger by placing a lettuce leaf on the bottom bun, followed by the spinach-paneer patty, tomato slices, cucumber slices, and a dollop of yogurt. Top with the other half of the bun.
  9. Serve hot with your choice of chutney or sauce.
