- Spinach - 200 grams
- Paneer - 150 grams
- Whole wheat burger buns - 2
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green chili - 1, finely chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Olive oil - 1 tablespoon
- Lettuce leaves - 2
- Tomato - 1 medium, sliced
- Cucumber - 1 small, sliced
- Yogurt - 2 tablespoons (for topping)
Steps
- Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes until wilted. Drain and immediately transfer to cold water to retain the green color.
- In a pan, heat olive oil over medium heat. Add the chopped onion, garlic, ginger, and green chili, and sauté until the onion is translucent.
- Add the blanched spinach to the pan and mix well. Stir in cumin powder, coriander powder, garam masala, salt, and black pepper. Cook for another 5 minutes, then remove from heat.
- Crumble the paneer into small pieces and add it to the spinach mixture. Mix until well combined and let it cool slightly.
- Form the mixture into two patties, ensuring they are compact to hold their shape when cooked.
- In the same pan, add a little more olive oil and cook the patties on medium heat for about 4-5 minutes on each side until golden brown.
- Toast the whole wheat burger buns lightly on a separate pan or in the oven.
- Assemble the burger by placing a lettuce leaf on the bottom bun, followed by the spinach-paneer patty, tomato slices, cucumber slices, and a dollop of yogurt. Top with the other half of the bun.
- Serve hot with your choice of chutney or sauce.
