Ingredients
- Fresh spinach - 200 grams
- Paneer (Indian cottage cheese) - 150 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Ginger - 1 teaspoon, grated
- Garlic - 1 teaspoon, minced
- Green chili - 1, slit
- Cumin seeds - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Red chili powder - 1/2 teaspoon
- Fresh cream - 2 tablespoons
- Oil - 1 tablespoon
- Salt - to taste
- Water - as needed
Steps
- Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes. Drain and immediately transfer to cold water to retain the green color.
- Once cooled, blend the spinach into a smooth puree and set aside.
- In a pan, heat oil over medium heat and add cumin seeds. Let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Stir in the ginger, garlic, and green chili. Sauté for another minute until fragrant.
- Add the pureed tomato and cook until the oil separates from the mixture.
- Mix in the turmeric powder, red chili powder, and salt. Cook for 2-3 minutes.
- Pour the spinach puree into the pan and stir well. Cook for 5 minutes on low heat.
- Cut the paneer into cubes and add to the spinach mixture. Gently mix to coat the paneer with the sauce.
- Stir in the garam masala and fresh cream. Cook for an additional 2-3 minutes.
- Serve hot with roti or rice.
