Palak Khichdi

Ingredients

  • Palak (Spinach) - 200 grams
  • Moong Dal (Yellow Split Lentils) - 100 grams
  • Cauliflower Rice - 200 grams
  • Onion - 1 medium, finely chopped
  • Ginger - 1 teaspoon, grated
  • Green Chili - 1, slit
  • Cumin Seeds - 1 teaspoon
  • Turmeric Powder - 1/2 teaspoon
  • Garam Masala - 1/2 teaspoon
  • Salt - to taste
  • Ghee (Clarified Butter) - 2 tablespoons
  • Water - 3 cups

Steps

  1. Wash the palak (spinach) thoroughly and blanch it in boiling water for 2-3 minutes. Drain and blend it into a smooth paste.
  2. In a large pan, heat ghee over medium heat. Add cumin seeds and let them splutter.
  3. Add the chopped onion and sauté until it turns golden brown.
  4. Stir in the grated ginger and green chili, cooking for an additional minute.
  5. Add the moong dal, turmeric powder, and salt, stirring well for 2-3 minutes.
  6. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 10 minutes, or until the dal is cooked.
  7. Add the cauliflower rice and the blended palak paste, mixing everything well. Cook for another 5-7 minutes until the cauliflower rice is tender.
  8. Sprinkle garam masala, mix well, and remove from heat. Serve hot.
