Palak Khichdi

- Palak (Spinach) - 200 grams
- Moong Dal (Yellow Split Lentils) - 100 grams
- Cauliflower Rice - 200 grams
- Onion - 1 medium, finely chopped
- Ginger - 1 teaspoon, grated
- Green Chili - 1, slit
- Cumin Seeds - 1 teaspoon
- Turmeric Powder - 1/2 teaspoon
- Garam Masala - 1/2 teaspoon
- Salt - to taste
- Ghee (Clarified Butter) - 2 tablespoons
- Water - 3 cups
Steps
- Wash the palak (spinach) thoroughly and blanch it in boiling water for 2-3 minutes. Drain and blend it into a smooth paste.
- In a large pan, heat ghee over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onion and sauté until it turns golden brown.
- Stir in the grated ginger and green chili, cooking for an additional minute.
- Add the moong dal, turmeric powder, and salt, stirring well for 2-3 minutes.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 10 minutes, or until the dal is cooked.
- Add the cauliflower rice and the blended palak paste, mixing everything well. Cook for another 5-7 minutes until the cauliflower rice is tender.
- Sprinkle garam masala, mix well, and remove from heat. Serve hot.
