Ingredients

  • Whole wheat pizza base - 1 medium (approximately 30 cm)
  • Chickpeas (cooked or canned) - 1 cup (240 g)
  • Fresh spinach - 200 g
  • Tomato puree - 1/2 cup (120 ml)
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 tsp, grated
  • Cumin powder - 1 tsp
  • Coriander powder - 1 tsp
  • Garam masala - 1/2 tsp
  • Turmeric powder - 1/2 tsp
  • Chili powder - 1/2 tsp (adjust to taste)
  • Olive oil - 1 tbsp
  • Salt - to taste
  • Fresh cilantro - for garnish
  • Water - as needed

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a pan, heat the olive oil over medium heat and add the chopped onion, cooking until translucent.
  3. Add the minced garlic and grated ginger, sautéing for another minute until fragrant.
  4. Stir in the cumin, coriander, garam masala, turmeric, and chili powder, cooking for 30 seconds.
  5. Add the chickpeas and tomato puree, mixing well. Cook for 5-7 minutes, adding a little water if necessary to keep it from sticking, until heated through and slightly thickened.
  6. In a separate pot, blanch the spinach in boiling water for 2 minutes, then drain and blend into a smooth paste with a little water if needed.
  7. Spread the spinach puree evenly over the pizza base.
  8. Layer the chickpea mixture on top of the spinach puree, spreading it out evenly.
  9. Bake in the preheated oven for 15-20 minutes, or until the edges of the pizza are golden brown.
  10. Remove from the oven, garnish with fresh cilantro, slice, and serve hot.
