- Whole wheat pizza base - 1 medium (approximately 30 cm)
- Chickpeas (cooked or canned) - 1 cup (240 g)
- Fresh spinach - 200 g
- Tomato puree - 1/2 cup (120 ml)
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 tsp, grated
- Cumin powder - 1 tsp
- Coriander powder - 1 tsp
- Garam masala - 1/2 tsp
- Turmeric powder - 1/2 tsp
- Chili powder - 1/2 tsp (adjust to taste)
- Olive oil - 1 tbsp
- Salt - to taste
- Fresh cilantro - for garnish
- Water - as needed
Steps
- Preheat your oven to 220°C (428°F).
- In a pan, heat the olive oil over medium heat and add the chopped onion, cooking until translucent.
- Add the minced garlic and grated ginger, sautéing for another minute until fragrant.
- Stir in the cumin, coriander, garam masala, turmeric, and chili powder, cooking for 30 seconds.
- Add the chickpeas and tomato puree, mixing well. Cook for 5-7 minutes, adding a little water if necessary to keep it from sticking, until heated through and slightly thickened.
- In a separate pot, blanch the spinach in boiling water for 2 minutes, then drain and blend into a smooth paste with a little water if needed.
- Spread the spinach puree evenly over the pizza base.
- Layer the chickpea mixture on top of the spinach puree, spreading it out evenly.
- Bake in the preheated oven for 15-20 minutes, or until the edges of the pizza are golden brown.
- Remove from the oven, garnish with fresh cilantro, slice, and serve hot.
