- Spinach - 200 grams
- Canned chickpeas - 1 cup (240 grams)
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Ginger - 1 inch piece, grated
- Garlic - 2 cloves, minced
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Water - 1/2 cup
Steps
- Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes. Drain and blend it into a smooth paste.
- In a pan, heat olive oil over medium heat and add cumin seeds. Once they splutter, add the chopped onion and sauté until golden brown.
- Add the minced garlic, grated ginger, and slit green chili. Sauté for another 1-2 minutes until fragrant.
- Stir in the pureed tomato and cook for 5-7 minutes, allowing it to thicken.
- Add turmeric powder, coriander powder, and salt. Mix well and cook for another 2 minutes.
- Add the canned chickpeas (drained and rinsed) and the spinach paste. Mix everything well.
- Pour in 1/2 cup of water, stir, and let it simmer for 10 minutes on low heat.
- Finally, sprinkle garam masala and stir well. Cook for an additional 2 minutes before serving.
