Ingredients

  • Spinach - 200 grams
  • Canned chickpeas - 1 cup (240 grams)
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger - 1 inch piece, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Water - 1/2 cup

Steps

  1. Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes. Drain and blend it into a smooth paste.
  2. In a pan, heat olive oil over medium heat and add cumin seeds. Once they splutter, add the chopped onion and sauté until golden brown.
  3. Add the minced garlic, grated ginger, and slit green chili. Sauté for another 1-2 minutes until fragrant.
  4. Stir in the pureed tomato and cook for 5-7 minutes, allowing it to thicken.
  5. Add turmeric powder, coriander powder, and salt. Mix well and cook for another 2 minutes.
  6. Add the canned chickpeas (drained and rinsed) and the spinach paste. Mix everything well.
  7. Pour in 1/2 cup of water, stir, and let it simmer for 10 minutes on low heat.
  8. Finally, sprinkle garam masala and stir well. Cook for an additional 2 minutes before serving.
