Ingredients

  • Chicken breast - 300 grams, diced
  • Fresh spinach - 200 grams, washed and chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit (adjust to taste)
  • Coconut oil - 2 tablespoons
  • Heavy cream - 100 ml
  • Garam masala - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Heat coconut oil in a pan over medium heat. Add chopped onions and sauté until golden brown.
  2. Add minced garlic, grated ginger, and green chili to the pan. Cook for another 2-3 minutes until fragrant.
  3. Stir in the diced chicken pieces. Season with salt, pepper, turmeric powder, and cumin powder. Cook until the chicken is browned and cooked through, about 8-10 minutes.
  4. Add the chopped spinach to the pan and stir well. Cook until the spinach wilts, about 3-4 minutes.
  5. Reduce the heat to low and pour in the heavy cream. Stir to combine and let it simmer for another 5 minutes.
  6. Add garam masala and lemon juice, mixing well. Adjust seasoning if needed.
  7. Serve hot with a garnish of fresh cilantro or a side of low-carb naan.
