- Chicken breast - 300 grams, diced
- Fresh spinach - 200 grams, washed and chopped
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, slit (adjust to taste)
- Coconut oil - 2 tablespoons
- Heavy cream - 100 ml
- Garam masala - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Heat coconut oil in a pan over medium heat. Add chopped onions and sauté until golden brown.
- Add minced garlic, grated ginger, and green chili to the pan. Cook for another 2-3 minutes until fragrant.
- Stir in the diced chicken pieces. Season with salt, pepper, turmeric powder, and cumin powder. Cook until the chicken is browned and cooked through, about 8-10 minutes.
- Add the chopped spinach to the pan and stir well. Cook until the spinach wilts, about 3-4 minutes.
- Reduce the heat to low and pour in the heavy cream. Stir to combine and let it simmer for another 5 minutes.
- Add garam masala and lemon juice, mixing well. Adjust seasoning if needed.
- Serve hot with a garnish of fresh cilantro or a side of low-carb naan.
