- Red onion - 1/4 cup (finely chopped)
- Tomato - 1/4 cup (diced)
- Fresh coriander - 2 tablespoons (chopped)
- Green chilies - 1 (finely chopped, optional)
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine almond flour, grated mozzarella cheese, egg, salt, cumin powder, and olive oil to form a dough.
- Spread the dough onto a parchment-lined baking tray, forming a round pizza base about 1/2 inch thick.
- Bake the crust in the preheated oven for 10-12 minutes or until golden brown.
- While the crust is baking, prepare the topping by mixing blanched spinach, chaat masala, chopped red onion, diced tomato, and chopped green chilies (if using) in a bowl.
- Once the crust is done, remove it from the oven and spread a layer of yogurt over it.
- Top the yogurt layer with the spinach mixture evenly, then drizzle tamarind chutney on top.
- Return the pizza to the oven and bake for an additional 5 minutes.
- Remove the pizza, garnish with fresh coriander, and let it cool for a minute before slicing and serving.
