Ingredients

  • Fresh spinach - 200 grams
  • Chickpea flour (besan) - 50 grams
  • Boiled potatoes - 100 grams
  • Cumin powder - 1 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Oil for frying - as needed
  • Burger buns - 2 pieces
  • Vegan yogurt - 100 grams
  • Tamarind chutney - 2 tablespoons
  • Mint chutney - 2 tablespoons
  • Sliced cucumber - 1/2 cucumber
  • Sliced tomato - 1 medium
  • Sliced onion - 1 small
  • Fresh coriander leaves - for garnish

Steps

  1. Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes. Drain and cool it in cold water, then squeeze out excess water and chop finely.
  2. In a mixing bowl, combine the chopped spinach, boiled potatoes (mashed), chickpea flour, cumin powder, red chili powder, salt, and turmeric powder. Mix well to form a thick mixture.
  3. Divide the mixture into two equal portions and shape them into burger patties.
  4. Heat oil in a frying pan over medium heat. Once hot, carefully place the patties in the pan and fry until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.
  5. Toast the burger buns lightly on the same pan until golden brown.
  6. Assemble the burgers by spreading a layer of vegan yogurt on the bottom half of each bun, placing the spinach patty on top, and adding sliced cucumber, tomato, and onion.
  7. Drizzle tamarind and mint chutney over the vegetables, sprinkle with fresh coriander leaves, and cover with the top half of the bun.
  8. Serve immediately with extra chutney on the side.
