- Fresh spinach - 200 grams
- Chickpea flour (besan) - 50 grams
- Boiled potatoes - 100 grams
- Cumin powder - 1 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Oil for frying - as needed
- Burger buns - 2 pieces
- Vegan yogurt - 100 grams
- Tamarind chutney - 2 tablespoons
- Mint chutney - 2 tablespoons
- Sliced cucumber - 1/2 cucumber
- Sliced tomato - 1 medium
- Sliced onion - 1 small
- Fresh coriander leaves - for garnish
Steps
- Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes. Drain and cool it in cold water, then squeeze out excess water and chop finely.
- In a mixing bowl, combine the chopped spinach, boiled potatoes (mashed), chickpea flour, cumin powder, red chili powder, salt, and turmeric powder. Mix well to form a thick mixture.
- Divide the mixture into two equal portions and shape them into burger patties.
- Heat oil in a frying pan over medium heat. Once hot, carefully place the patties in the pan and fry until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.
- Toast the burger buns lightly on the same pan until golden brown.
- Assemble the burgers by spreading a layer of vegan yogurt on the bottom half of each bun, placing the spinach patty on top, and adding sliced cucumber, tomato, and onion.
- Drizzle tamarind and mint chutney over the vegetables, sprinkle with fresh coriander leaves, and cover with the top half of the bun.
- Serve immediately with extra chutney on the side.
