Ingredients

  • Fresh spinach leaves - 200 grams
  • Besan (gram flour) - 50 grams
  • Rice flour - 20 grams
  • Chili powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - to taste
  • Water - as needed for batter
  • Oil - for frying
  • Plain yogurt - 100 grams
  • Tamarind chutney - 2 tablespoons
  • Green chutney - 2 tablespoons
  • Chaat masala - 1 teaspoon
  • Pomegranate seeds - 2 tablespoons
  • Chopped cilantro - for garnish

Steps

  1. Wash and dry the spinach leaves thoroughly, removing any stems.
  2. In a mixing bowl, combine besan, rice flour, chili powder, cumin powder, and salt.
  3. Gradually add water to the dry ingredients to make a smooth batter that coats the spinach leaves lightly.
  4. Heat oil in a frying pan over medium heat.
  5. Dip each spinach leaf in the batter, allowing excess batter to drip off, and carefully place it in the hot oil.
  6. Fry the spinach leaves until they are crispy and golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
  7. In a serving plate, place a layer of crispy spinach leaves.
  8. Drizzle plain yogurt over the fried spinach, followed by tamarind and green chutney.
  9. Sprinkle chaat masala, pomegranate seeds, and chopped cilantro on top.
  10. Serve immediately while the spinach is still crispy.
