Ingredients

  • Potatoes - 150 grams

  • Chickpea flour (besan) - 100 grams
  • Rice flour - 30 grams
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Water - 100 ml (adjust as needed)
  • Baking soda - 1/4 teaspoon
  • Oil (for frying) - 500 ml

Steps

  1. Peel and slice the potatoes into thin rounds and cut the cauliflower into small florets. Rinse the spinach leaves and chop them coarsely.
  2. In a mixing bowl, combine chickpea flour, rice flour, cumin seeds, turmeric powder, red chili powder, and salt. Mix well to combine the dry ingredients.
  3. Gradually add water to the dry mixture, stirring continuously until you achieve a smooth, thick batter. Add baking soda and mix well.
  4. Heat oil in a deep frying pan over medium heat. Once the oil is hot, dip the sliced potatoes, cauliflower florets, and spinach in the batter, ensuring they are well coated.
  5. Carefully drop the battered vegetables into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 4-5 minutes per batch.
  6. Using a slotted spoon, remove the pakoras from the oil and drain on paper towels to remove excess oil.
  7. Serve hot with mint chutney and tamarind sauce for dipping.
