- Red chili powder - 1 teaspoon
- Salt - 1 teaspoon
- Water - 100 ml (adjust as needed)
- Baking soda - 1/4 teaspoon
- Oil (for frying) - 500 ml
Steps
- Peel and slice the potatoes into thin rounds and cut the cauliflower into small florets. Rinse the spinach leaves and chop them coarsely.
- In a mixing bowl, combine chickpea flour, rice flour, cumin seeds, turmeric powder, red chili powder, and salt. Mix well to combine the dry ingredients.
- Gradually add water to the dry mixture, stirring continuously until you achieve a smooth, thick batter. Add baking soda and mix well.
- Heat oil in a deep frying pan over medium heat. Once the oil is hot, dip the sliced potatoes, cauliflower florets, and spinach in the batter, ensuring they are well coated.
- Carefully drop the battered vegetables into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 4-5 minutes per batch.
- Using a slotted spoon, remove the pakoras from the oil and drain on paper towels to remove excess oil.
- Serve hot with mint chutney and tamarind sauce for dipping.
