Ingredients

  • Chickpea flour - 100 grams
  • Water - 150 ml
  • Potato - 1 medium, thinly sliced
  • Spinach - 50 grams, chopped
  • Onion - 1 small, thinly sliced
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Baking soda - 1/4 teaspoon
  • Oil - for deep frying

Steps

  1. In a mixing bowl, combine chickpea flour, water, cumin seeds, turmeric powder, red chili powder, and salt to form a smooth batter.
  2. Add baking soda to the batter and mix well.
  3. Fold in the sliced potatoes, chopped spinach, and sliced onion until all the vegetables are coated in the batter.
  4. Heat oil in a deep frying pan over medium heat.
  5. Once hot, drop spoonfuls of the batter-coated vegetables into the oil, frying in batches to avoid overcrowding.
  6. Fry until golden brown and crispy, about 4-5 minutes per batch, then remove and drain on paper towels.
  7. Serve hot with mint chutney or tamarind sauce.
