- Chickpea flour - 100 grams
- Water - 150 ml
- Potato - 1 medium, thinly sliced

- Onion - 1 small, thinly sliced
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Baking soda - 1/4 teaspoon
- Oil - for deep frying
Steps
- In a mixing bowl, combine chickpea flour, water, cumin seeds, turmeric powder, red chili powder, and salt to form a smooth batter.
- Add baking soda to the batter and mix well.
- Fold in the sliced potatoes, chopped spinach, and sliced onion until all the vegetables are coated in the batter.
- Heat oil in a deep frying pan over medium heat.
- Once hot, drop spoonfuls of the batter-coated vegetables into the oil, frying in batches to avoid overcrowding.
- Fry until golden brown and crispy, about 4-5 minutes per batch, then remove and drain on paper towels.
- Serve hot with mint chutney or tamarind sauce.
