Ingredients

  • Chicken thighs - 300 grams, boneless and skinless
  • Himalayan pink salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Ginger paste - 1 tablespoon
  • Garlic paste - 1 tablespoon
  • Cilantro (fresh) - 1/4 cup, finely chopped
  • Mint leaves - 1/4 cup, finely chopped
  • Green chili - 1, finely chopped (adjust to taste)
  • Lemon juice - 2 tablespoons
  • Yogurt - 100 grams, plain and unsweetened
  • Olive oil - 1 tablespoon
  • Cumin powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Skewers - 2 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a large bowl, combine the ginger paste, garlic paste, cilantro, mint leaves, green chili, lemon juice, yogurt, olive oil, cumin powder, garam masala, turmeric powder, black pepper, and Himalayan pink salt to make the marinade.
  2. Add the chicken thighs to the marinade and mix well to coat evenly. Cover and refrigerate for at least 30 minutes, preferably 2 hours for deeper flavor.
  3. Preheat the grill or barbecue to medium-high heat.
  4. Thread the marinated chicken onto the skewers.
  5. Place the skewers on the grill and cook for about 15-20 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Remove from the grill and let rest for a few minutes before serving. Garnish with extra chopped cilantro and mint if desired.
