- Cucumber - 1 medium, diced

- Green chili - 1, finely chopped (adjust to taste)
- Fresh coriander leaves - 2 tablespoons, chopped
- Coconut - 2 tablespoons, grated
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black mustard seeds - 1 teaspoon
- Oil - 1 teaspoon (for tempering)
- Water - 1/4 cup
Steps
- In a large bowl, combine diced cucumber, tomato, grated carrot, chopped red onion, and green chili.
- Add chopped coriander leaves, grated coconut, lemon juice, and salt to the vegetable mix.
- In a small pan, heat the oil over medium heat and add the black mustard seeds.
- Once the mustard seeds start to splutter, remove from heat and pour the tempering over the salad.
- Mix all ingredients gently until well combined.
- Let the pachadi sit for 5 minutes to allow the flavors to meld before serving.
