Ingredients

  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Carrot - 1 medium, grated
  • Red onion - 1 small, finely chopped
  • Green chili - 1, finely chopped (adjust to taste)
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Coconut - 2 tablespoons, grated
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black mustard seeds - 1 teaspoon
  • Oil - 1 teaspoon (for tempering)
  • Water - 1/4 cup

Steps

  1. In a large bowl, combine diced cucumber, tomato, grated carrot, chopped red onion, and green chili.
  2. Add chopped coriander leaves, grated coconut, lemon juice, and salt to the vegetable mix.
  3. In a small pan, heat the oil over medium heat and add the black mustard seeds.
  4. Once the mustard seeds start to splutter, remove from heat and pour the tempering over the salad.
  5. Mix all ingredients gently until well combined.
  6. Let the pachadi sit for 5 minutes to allow the flavors to meld before serving.
