Ingredients

  • Whole wheat flour - 1 cup
  • Spinach (fresh) - 1 cup, packed
  • Water - 2 tablespoons (if needed)
  • Oil (for frying) - enough for deep frying
  • Cumin seeds - 1/2 teaspoon
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Salt - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Asafoetida - a pinch

Steps

  1. Blanch the spinach in boiling water for 2-3 minutes, then drain and cool it in cold water. Drain again and blend it into a smooth paste.
  2. In a mixing bowl, combine whole wheat flour, salt, turmeric powder, cumin seeds, green chili, ginger, and asafoetida.
  3. Add the spinach puree to the flour mixture and knead into a soft dough. If the dough is too dry, add water as needed.
  4. Cover the dough with a damp cloth and let it rest for 15 minutes.
  5. Divide the dough into 6 equal portions and roll each portion into a ball.
  6. Flatten each ball slightly and roll it out into a circle about 4-5 inches in diameter, using a little flour to prevent sticking.
  7. Heat oil in a deep frying pan over medium heat. Once hot, gently slide in one puri at a time.
  8. Fry until the puri puffs up and turns golden brown on both sides. Remove and drain on paper towels.
  9. Serve hot with your favorite curry or chutney.
