Ingredients

  • Chickpeas (cooked) - 1 cup (240g)
  • Spinach (fresh, chopped) - 2 cups (60g)
  • Onion (finely chopped) - 1 medium (100g)
  • Tomato (pureed) - 1 medium (100g)
  • Garlic (minced) - 3 cloves
  • Ginger (grated) - 1 inch piece
  • Green chili (slit) - 1
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Oil (cooking) - 1 tablespoon
  • Water - 1/2 cup (120ml)
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the oil in a pan over medium heat and add cumin seeds. Let them splutter.
  2. Add the finely chopped onion and sauté until golden brown.
  3. Stir in the minced garlic, grated ginger, and slit green chili. Sauté for another 1-2 minutes until fragrant.
  4. Add the pureed tomato and cook until the oil separates from the mixture, about 5-7 minutes.
  5. Mix in the turmeric powder, coriander powder, and salt. Cook for another minute.
  6. Add the chopped spinach and cook until wilted, around 3-4 minutes.
  7. Stir in the cooked chickpeas and water. Mix well and let it simmer for 10 minutes.
  8. Sprinkle with garam masala and stir. Cook for an additional 2 minutes.
  9. Remove from heat and add lemon juice. Serve hot with rice or flatbread.
