  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Oil - for frying (about 1 cup)
  • Tamarind chutney - 2 tablespoons
  • Mint chutney - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Tomato - 1 small, finely chopped
  • Sev (crispy chickpea noodles) - 2 tablespoons
  • Coriander leaves - for garnish

Steps

  1. Wash and dry the spinach leaves thoroughly.
  2. In a mixing bowl, combine rice flour, chaat masala, red chili powder, and salt.
  3. Add the spinach leaves to the bowl and coat them evenly with the flour mixture.
  4. Heat oil in a deep frying pan over medium heat.
  5. Once the oil is hot, carefully add the coated spinach leaves in batches, frying until they are crispy and golden brown.
  6. Remove the fried spinach and place them on paper towels to absorb excess oil.
  7. On a serving plate, arrange the crispy spinach leaves.
  8. Drizzle tamarind chutney and mint chutney over the spinach.
  9. Top with chopped onion and tomato.
  10. Sprinkle sev on top and garnish with fresh coriander leaves before serving.
