Ingredients

  • Basmati rice - 1/4 cup (50g)
  • Coconut milk - 1 cup (240ml)
  • Water - 2 cups (480ml)
  • Jaggery, grated - 1/3 cup (50g)
  • Cardamom powder - 1/2 teaspoon
  • Cashews - 2 tablespoons
  • Raisins - 2 tablespoons
  • Coconut, grated (fresh or desiccated) - 2 tablespoons

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a saucepan, combine the soaked rice (drained) and 2 cups of water. Bring to a boil, then reduce the heat and simmer until the rice is soft and cooked, about 15-20 minutes.
  3. Once the rice is cooked, add the coconut milk and jaggery to the saucepan. Stir well and cook on low heat for another 10 minutes until the mixture thickens slightly.
  4. Add the cardamom powder and mix well. Remove from heat.
  5. In a small frying pan, heat a teaspoon of oil (or use water for oil-free) and lightly roast the cashews and raisins until golden. Add them to the payasam.
  6. Garnish with grated coconut before serving.
