Paal Payasam

Ingredients
- Basmati rice - 1/4 cup (50g)
- Coconut milk - 1 cup (240ml)
- Water - 2 cups (480ml)
- Jaggery, grated - 1/3 cup (50g)
- Cardamom powder - 1/2 teaspoon
- Cashews - 2 tablespoons
- Raisins - 2 tablespoons
- Coconut, grated (fresh or desiccated) - 2 tablespoons
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a saucepan, combine the soaked rice (drained) and 2 cups of water. Bring to a boil, then reduce the heat and simmer until the rice is soft and cooked, about 15-20 minutes.
- Once the rice is cooked, add the coconut milk and jaggery to the saucepan. Stir well and cook on low heat for another 10 minutes until the mixture thickens slightly.
- Add the cardamom powder and mix well. Remove from heat.
- In a small frying pan, heat a teaspoon of oil (or use water for oil-free) and lightly roast the cashews and raisins until golden. Add them to the payasam.
- Garnish with grated coconut before serving.
