- Coconut milk - 400 ml
- Jaggery, grated - 100 grams
- Rice flour - 2 tablespoons
- Cardamom powder - 1/4 teaspoon
- Cashew nuts - 2 tablespoons, chopped
- Coconut, grated - 2 tablespoons
- Salt - a pinch
Steps
- In a heavy-bottomed pan, pour the coconut milk and bring it to a gentle boil over medium heat.
- Add the grated jaggery to the boiling coconut milk and stir until it completely dissolves.
- In a small bowl, mix the rice flour with a little water to make a smooth paste. Gradually add this paste to the coconut milk mixture, stirring continuously to avoid lumps.
- Lower the heat and continue to cook the mixture, stirring frequently, until it thickens and starts to leave the sides of the pan (about 15-20 minutes).
- Add the cardamom powder and a pinch of salt to enhance the flavor, stirring well.
- Once the mixture has thickened to a pudding-like consistency, remove it from heat.
- Pour the mixture into serving bowls and let it cool slightly.
- Garnish with chopped cashew nuts and grated coconut before serving.
