Ingredients

  • Coconut milk - 400 ml
  • Jaggery, grated - 100 grams
  • Rice flour - 2 tablespoons
  • Cardamom powder - 1/4 teaspoon
  • Cashew nuts - 2 tablespoons, chopped
  • Coconut, grated - 2 tablespoons
  • Salt - a pinch

Steps

  1. In a heavy-bottomed pan, pour the coconut milk and bring it to a gentle boil over medium heat.
  2. Add the grated jaggery to the boiling coconut milk and stir until it completely dissolves.
  3. In a small bowl, mix the rice flour with a little water to make a smooth paste. Gradually add this paste to the coconut milk mixture, stirring continuously to avoid lumps.
  4. Lower the heat and continue to cook the mixture, stirring frequently, until it thickens and starts to leave the sides of the pan (about 15-20 minutes).
  5. Add the cardamom powder and a pinch of salt to enhance the flavor, stirring well.
  6. Once the mixture has thickened to a pudding-like consistency, remove it from heat.
  7. Pour the mixture into serving bowls and let it cool slightly.
  8. Garnish with chopped cashew nuts and grated coconut before serving.
