Ingredients

  • Full-fat milk - 500 ml
  • Basmati rice - 30 g
  • Sugar - 50 g
  • Cardamom pods - 2 (crushed)
  • Saffron strands - a pinch
  • Chopped nuts (almonds and pistachios) - 15 g
  • Raisins - 10 g
  • Salt - a pinch
  • Vanilla extract - 1/2 tsp

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for about 30 minutes, then drain.
  2. In a heavy-bottomed saucepan, bring the full-fat milk to a boil over medium heat. Stir occasionally to prevent it from scorching.
  3. Once the milk is boiling, add the soaked and drained rice. Reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally.
  4. Add the sugar, crushed cardamom pods, saffron strands, and a pinch of salt to the rice and milk mixture. Stir well and let it cook for an additional 5-10 minutes until the rice is soft and the kheer thickens to your desired consistency.
  5. Remove from heat and stir in the vanilla extract. Allow the kheer to cool slightly.
  6. Serve warm or chilled, garnished with chopped nuts and raisins.
