- Fresh oysters - 6 large
- Ghee (clarified butter) - 2 tablespoons
- Garlic - 2 cloves, minced
- Shallot - 1 small, finely chopped
- Spinach - 1 cup, chopped
- Cilantro - 2 tablespoons, chopped
- Coconut flour - 3 tablespoons
- Pine nuts - 2 tablespoons, toasted
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Lemon - 1, for juice and zest
Steps
- Preheat the oven to 200°C (400°F).
- Shuck the oysters and place them on a baking tray, keeping them in their shells.
- In a skillet, melt the ghee over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 3 minutes.
- Add the chopped spinach and cook until wilted, about 2-3 minutes.
- Stir in the cilantro, coconut flour, toasted pine nuts, cumin, coriander, black pepper, and salt. Mix well until combined.
- Spoon the spinach mixture evenly over each oyster, packing it gently.
- Drizzle a little lemon juice over the topped oysters and sprinkle with lemon zest.
- Bake in the preheated oven for about 10-12 minutes, or until the topping is golden and the oysters are cooked through.
- Remove from the oven and let cool for a minute before serving.
