- Basmati rice - 1 cup (200g)
- Onions - 2 medium (200g)
- Olive oil - 2 tablespoons (30ml)
- Cumin seeds - 1 teaspoon (5g)
- Mustard seeds - 1/2 teaspoon (2g)
- Turmeric powder - 1/2 teaspoon (2g)
- Garam masala - 1 teaspoon (5g)
- Salt - 1 teaspoon (6g)
- Fresh cilantro - 2 tablespoons, chopped (10g)
- Water - 2 cups (500ml)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a pan, heat the olive oil over medium heat. Add cumin seeds and mustard seeds, and sauté until they start to crackle.
- Slice the onions thinly and add them to the pan. Cook the onions, stirring occasionally, until they are golden brown and caramelized (about 10-12 minutes).
- Add turmeric powder and garam masala to the onions, stirring well to combine. Cook for another 1-2 minutes to release the spices' aromas.
- Drain the soaked rice and add it to the pan. Stir to coat the rice with the onion and spice mixture.
- Pour in the water and add salt. Bring the mixture to a boil, then reduce the heat to low and cover the pan with a lid.
- Cook for 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit for 5 minutes.
- Fluff the rice with a fork, garnish with fresh cilantro, and serve warm.
