- wild rice - 100 grams
- coconut milk - 200 ml
- maple syrup - 2 tablespoons
- vanilla extract - 1 teaspoon
- cinnamon - 1/2 teaspoon
- sea salt - 1/4 teaspoon
- chopped pecans - 30 grams
- fresh blueberries - 50 grams
Steps
- Rinse the wild rice under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed wild rice and 250ml of water. Bring to a boil, then reduce the heat to low and cover. Cook for about 30-35 minutes or until the rice is tender and the grains have burst.
- Once the wild rice is cooked, drain any excess water and return it to the saucepan.
- Add the coconut milk, maple syrup, vanilla extract, cinnamon, and sea salt to the cooked wild rice. Stir well to combine.
- Cook over medium heat for an additional 5-10 minutes, stirring occasionally, until the mixture thickens to a pudding-like consistency.
- Remove from heat, and stir in the chopped pecans.
- Serve warm, topped with fresh blueberries.
