Ingredients

  • wild rice - 100 grams
  • coconut milk - 200 ml
  • maple syrup - 2 tablespoons
  • vanilla extract - 1 teaspoon
  • cinnamon - 1/2 teaspoon
  • sea salt - 1/4 teaspoon
  • chopped pecans - 30 grams
  • fresh blueberries - 50 grams

Steps

  1. Rinse the wild rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed wild rice and 250ml of water. Bring to a boil, then reduce the heat to low and cover. Cook for about 30-35 minutes or until the rice is tender and the grains have burst.
  3. Once the wild rice is cooked, drain any excess water and return it to the saucepan.
  4. Add the coconut milk, maple syrup, vanilla extract, cinnamon, and sea salt to the cooked wild rice. Stir well to combine.
  5. Cook over medium heat for an additional 5-10 minutes, stirring occasionally, until the mixture thickens to a pudding-like consistency.
  6. Remove from heat, and stir in the chopped pecans.
  7. Serve warm, topped with fresh blueberries.
