Ingredients

  • Tofu - 200 grams
  • Mustard oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 2, slit
  • Tomato - 1 medium, chopped
  • Turmeric powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Coconut milk - 200 ml
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Heat the mustard oil in a pan over medium heat until it starts to smoke slightly.
  2. Add the finely chopped onion and sauté until golden brown.
  3. Stir in the minced garlic, grated ginger, and slit green chilies, cooking for another 2 minutes.
  4. Add the chopped tomato and cook until it softens, about 3-4 minutes.
  5. Sprinkle in the turmeric, coriander, cumin powder, and salt, and mix well.
  6. Add the tofu cubes gently to the pan, stirring to coat them in the spice mixture.
  7. Pour in the coconut milk and bring the mixture to a gentle simmer.
  8. Cover the pan and cook for 10-12 minutes, allowing the flavors to meld together.
  9. Finish by stirring in the garam masala and garnishing with fresh coriander leaves.
  10. Serve hot with steamed rice or bread.
