Oats Idli
Oats Idli is a healthy twist on the traditional South Indian steamed rice cakes, made with oats and fermented batter for a nutritious breakfast. Fluffy and light, these idlis are perfect for a wholesome start to your day.

Ingredients
- Rolled oats - 1 cup
- Urad dal (split black gram) - 1/4 cup
- Fenugreek seeds - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Water - 1 cup (plus more for soaking)
- Grated carrot - 1/4 cup
- Chopped coriander leaves - 2 tablespoons
- Ginger (grated) - 1 teaspoon
- Green chilies (finely chopped) - 1 teaspoon
- Baking soda - 1/2 teaspoon
- Oil - for greasing the idli molds
Steps
- Soak the urad dal and fenugreek seeds together in water for at least 4 hours.
- Soak the rolled oats in water for 30 minutes.
- Drain the soaked urad dal and fenugreek seeds, and blend them with a little water to a smooth batter.
- Drain the soaked oats and blend them with the udad dal batter until combined, adding more water as needed to achieve a smooth consistency.
- Transfer the batter to a bowl, add salt, grated carrot, chopped coriander leaves, ginger, and green chilies, and mix well.
- Cover the bowl and let the batter ferment for about 8 hours or overnight in a warm place.
- Once fermented, stir the batter gently and add baking soda, mixing until well combined.
- Grease the idli molds with a little oil, and pour the batter into each mold.
- Steam the idlis for about 10-12 minutes in a steamer or pressure cooker (without the weight) until they are cooked through.
- Remove the idlis from the molds and serve hot with coconut chutney or sambar.
