- Salmon fillet - 200 grams

- Bell pepper - 1 small, diced
- Zucchini - 1 small, diced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon

- Black pepper - 1/4 teaspoon
Steps
- Rinse the wild rice under cold water and combine it with 2 cups of water in a medium saucepan. Bring to a boil, then reduce to a simmer and cover for about 45 minutes or until the rice is tender and water is absorbed.
- While the rice cooks, heat olive oil in a skillet over medium heat. Add diced onion and garlic, sautéing until fragrant and translucent, about 3-4 minutes.
- Add the diced bell pepper and zucchini to the skillet, cooking for an additional 5 minutes until the vegetables are tender.
- Season the salmon fillet with salt and black pepper. Push the vegetables to one side of the skillet and place the salmon skin-side down on the other side. Cook for about 4-5 minutes on each side or until the salmon is cooked through and flakes easily with a fork.
- Once the rice is cooked, fluff it with a fork and mix in the sautéed vegetables, chopped parsley, and lemon juice. Adjust seasoning if necessary.
