Ingredients

  • Fresh nettle leaves - 200 grams
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Coconut oil - 2 tablespoons
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. Carefully wash the nettle leaves in cold water to remove any dirt or insects, then set aside.
  2. In a pot, heat the coconut oil over medium heat, and add the chopped onion, cooking until translucent, about 5 minutes.
  3. Add the minced garlic and grated ginger to the pot, and sauté for another 2 minutes until fragrant.
  4. Add the washed nettle leaves to the pot and stir for about 2 minutes until they wilt down.
  5. Pour in the vegetable broth and bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes.
  6. After simmering, remove the pot from heat and blend the soup using an immersion blender until smooth.
  7. Return the pot to low heat, stir in the coconut milk, and season with salt, black pepper, and lemon juice to taste.
  8. Serve hot, garnished with fresh cilantro.
