Ingredients
- Fresh nettle leaves - 200 grams
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Coconut oil - 2 tablespoons
- Vegetable broth - 500 ml
- Coconut milk - 100 ml
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- Carefully wash the nettle leaves in cold water to remove any dirt or insects, then set aside.
- In a pot, heat the coconut oil over medium heat, and add the chopped onion, cooking until translucent, about 5 minutes.
- Add the minced garlic and grated ginger to the pot, and sauté for another 2 minutes until fragrant.
- Add the washed nettle leaves to the pot and stir for about 2 minutes until they wilt down.
- Pour in the vegetable broth and bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes.
- After simmering, remove the pot from heat and blend the soup using an immersion blender until smooth.
- Return the pot to low heat, stir in the coconut milk, and season with salt, black pepper, and lemon juice to taste.
- Serve hot, garnished with fresh cilantro.
