- Ginger - 1 inch piece, grated
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth - 500 ml
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Salt - to taste
- Fresh lemon juice - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- In a large pot, heat the coconut oil over medium heat.
- Add the chopped onion, garlic, and grated ginger; sauté until the onion is translucent, about 5 minutes.
- Stir in the diced carrot and celery, cooking for an additional 5 minutes until softened.
- Add the cumin, turmeric, black pepper, and salt, stirring well to combine.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat to low and add the fresh nettle leaves, cooking for about 10 minutes until they wilt.
- Remove from heat and stir in the lemon juice.
- Using an immersion blender, blend the broth until smooth or leave it chunky for texture.
- Serve hot, garnished with fresh cilantro.
