- Fresh nettle leaves - 100 grams (washed and tough stems removed)
- Mixed mushrooms (such as cremini and shiitake) - 200 grams (sliced)
- Coconut oil - 2 tablespoons
- Garlic - 2 cloves (minced)
- Onion - 1 medium (finely chopped)
- Coconut milk - 200 ml
- Almond flour - 50 grams
- Nutmeg - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons (chopped, for garnish)
Steps
- Preheat your oven to 180°C (350°F).
- In a large skillet, heat the coconut oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are softened and any released liquid has evaporated, about 7-10 minutes.
- Stir in the nettle leaves and cook until wilted, about 2-3 minutes.
- Pour in the coconut milk and season with nutmeg, salt, and black pepper. Cook for an additional 5 minutes, allowing the mixture to thicken slightly.
- Remove the skillet from heat and stir in the almond flour until well combined.
- Transfer the mixture to a baking dish and spread it evenly.
- Bake in the preheated oven for 20 minutes, until the top is golden and bubbly.
- Remove from the oven and let it cool for a few minutes before garnishing with chopped parsley and serving.
