  • Fresh nettle leaves - 100 grams (washed and tough stems removed)
  • Mixed mushrooms (such as cremini and shiitake) - 200 grams (sliced)
  • Coconut oil - 2 tablespoons
  • Garlic - 2 cloves (minced)
  • Onion - 1 medium (finely chopped)
  • Coconut milk - 200 ml
  • Almond flour - 50 grams
  • Nutmeg - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons (chopped, for garnish)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, heat the coconut oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are softened and any released liquid has evaporated, about 7-10 minutes.
  4. Stir in the nettle leaves and cook until wilted, about 2-3 minutes.
  5. Pour in the coconut milk and season with nutmeg, salt, and black pepper. Cook for an additional 5 minutes, allowing the mixture to thicken slightly.
  6. Remove the skillet from heat and stir in the almond flour until well combined.
  7. Transfer the mixture to a baking dish and spread it evenly.
  8. Bake in the preheated oven for 20 minutes, until the top is golden and bubbly.
  9. Remove from the oven and let it cool for a few minutes before garnishing with chopped parsley and serving.
