Ingredients

  • Rice (preferably parboiled) - 1 cup
  • Water - 2 cups
  • Salt - 1/2 teaspoon
  • Coconut (grated, optional) - 2 tablespoons
  • Oil (for cooking) - as needed

Steps

  1. Rinse the rice thoroughly under running water until the water runs clear.
  2. Soak the rinsed rice in water for at least 4 hours or overnight.
  3. Drain the soaked rice and blend it with 2 cups of fresh water to a smooth batter. The consistency should be quite thin, similar to that of buttermilk.
  4. Add salt and grated coconut (if using) to the batter and mix well.
  5. Heat a non-stick skillet or dosa pan over medium heat and lightly grease it with oil.
  6. Pour a ladleful of the batter onto the hot skillet and quickly swirl the pan to spread the batter into a thin circle.
  7. Cook for about 1-2 minutes until the edges lift and the surface looks set. There is no need to flip the dosa.
  8. Remove the dosa and repeat the process with the remaining batter, greasing the pan as needed.
  9. Serve hot with coconut chutney or any preferred side dish.
