Ingredients
- Rice (preferably parboiled) - 1 cup
- Water - 2 cups
- Salt - 1/2 teaspoon
- Coconut (grated, optional) - 2 tablespoons
- Oil (for cooking) - as needed
Steps
- Rinse the rice thoroughly under running water until the water runs clear.
- Soak the rinsed rice in water for at least 4 hours or overnight.
- Drain the soaked rice and blend it with 2 cups of fresh water to a smooth batter. The consistency should be quite thin, similar to that of buttermilk.
- Add salt and grated coconut (if using) to the batter and mix well.
- Heat a non-stick skillet or dosa pan over medium heat and lightly grease it with oil.
- Pour a ladleful of the batter onto the hot skillet and quickly swirl the pan to spread the batter into a thin circle.
- Cook for about 1-2 minutes until the edges lift and the surface looks set. There is no need to flip the dosa.
- Remove the dosa and repeat the process with the remaining batter, greasing the pan as needed.
- Serve hot with coconut chutney or any preferred side dish.
