- Basmati rice - 1 cup
- Firm tofu - 200 grams
- Onion - 1 medium, thinly sliced
- Tomato - 1 medium, chopped
- Ginger-garlic paste - 1 tablespoon
- Green chili - 1, slit
- Biryani masala - 2 teaspoons
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cilantro leaves - 2 tablespoons, chopped
- Mint leaves - 2 tablespoons, chopped
- Vegetable broth - 2 cups
- Cooking oil - 2 tablespoons
- Salt - to taste
- Lemon juice - 1 tablespoon
- Saffron strands - a pinch (optional)
- Water - as needed for soaking rice
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- Press the tofu to remove excess moisture, then cut it into cubes and marinate with turmeric, salt, and lemon juice for 15 minutes.
- In a large pot, heat the oil over medium heat. Add cumin seeds and allow them to splutter.
- Add the sliced onions and sauté until golden brown. Then stir in the ginger-garlic paste and green chili, cooking for another minute until fragrant.
- Add the chopped tomatoes and cook until they soften. Mix in the biryani masala, coriander powder, and salt, cooking for another 2 minutes.
- Add the marinated tofu cubes to the pot and cook until they are lightly browned on all sides.
- Drain the soaked rice and add it to the pot, mixing gently to combine with the tofu and spices.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it cook for about 15-20 minutes, or until the rice is fully cooked and has absorbed the liquid.
- Once done, remove from heat and let it sit covered for another 5 minutes. Fluff the rice gently with a fork.
- Garnish with chopped cilantro and mint leaves before serving.
