Ingredients

  • Basmati rice - 1 cup
  • Firm tofu - 200 grams
  • Onion - 1 medium, thinly sliced
  • Tomato - 1 medium, chopped
  • Ginger-garlic paste - 1 tablespoon
  • Green chili - 1, slit
  • Biryani masala - 2 teaspoons
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cilantro leaves - 2 tablespoons, chopped
  • Mint leaves - 2 tablespoons, chopped
  • Vegetable broth - 2 cups
  • Cooking oil - 2 tablespoons
  • Salt - to taste
  • Lemon juice - 1 tablespoon
  • Saffron strands - a pinch (optional)
  • Water - as needed for soaking rice

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. Press the tofu to remove excess moisture, then cut it into cubes and marinate with turmeric, salt, and lemon juice for 15 minutes.
  3. In a large pot, heat the oil over medium heat. Add cumin seeds and allow them to splutter.
  4. Add the sliced onions and sauté until golden brown. Then stir in the ginger-garlic paste and green chili, cooking for another minute until fragrant.
  5. Add the chopped tomatoes and cook until they soften. Mix in the biryani masala, coriander powder, and salt, cooking for another 2 minutes.
  6. Add the marinated tofu cubes to the pot and cook until they are lightly browned on all sides.
  7. Drain the soaked rice and add it to the pot, mixing gently to combine with the tofu and spices.
  8. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it cook for about 15-20 minutes, or until the rice is fully cooked and has absorbed the liquid.
  9. Once done, remove from heat and let it sit covered for another 5 minutes. Fluff the rice gently with a fork.
  10. Garnish with chopped cilantro and mint leaves before serving.
