Ingredients

  • Mutton, bone-in - 500 grams
  • Onion, finely chopped - 1 medium (150 grams)
  • Garlic, minced - 4 cloves
  • Ginger, grated - 1 inch piece
  • Green chilies, slit - 2
  • Vinegar (preferably malt vinegar) - 4 tablespoons
  • Tomato puree - 100 grams
  • Coconut oil - 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Turmeric powder - 1 teaspoon
  • Coriander powder - 2 teaspoons
  • Cumin powder - 1 teaspoon
  • Black pepper powder - 1 teaspoon
  • Cinnamon stick - 1 small piece
  • Cloves - 4
  • Cardamom pods - 2
  • Salt - to taste
  • Water - as needed

Steps

  1. In a bowl, mix the mutton pieces with vinegar, turmeric powder, and salt. Allow it to marinate for at least 30 minutes.
  2. Heat coconut oil in a heavy-bottomed pot over medium heat. Add the mustard seeds and let them splutter.
  3. Add finely chopped onions and sauté until they are golden brown.
  4. Stir in the minced garlic, grated ginger, and slit green chilies. Cook for another 2 minutes until fragrant.
  5. Add the marinated mutton to the pot and brown the pieces on all sides.
  6. Sprinkle the coriander powder, cumin powder, black pepper powder, cinnamon stick, cloves, and cardamom pods. Mix well and sauté for 5 minutes.
  7. Pour in the tomato puree and mix until the mutton is well coated. Cook for another 5 minutes.
  8. Add enough water to cover the mutton, bring to a boil, then reduce heat to low and cover. Simmer for about 45 minutes or until the mutton is tender.
  9. Adjust salt to taste and add more water if necessary to achieve the desired consistency.
  10. Serve hot with steamed rice or gluten-free naan.
