- Mutton (boneless) - 300 grams
- Split Bengal gram (chana dal) - 50 grams
- Onion - 1 medium, chopped
- Garlic - 4 cloves
- Ginger - 1 inch piece
- Green chilies - 2, chopped
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - 1 teaspoon
- Fresh coriander leaves - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Oil - for shallow frying
- Egg - 1, beaten (optional for binding)
Steps
- Soak the chana dal in water for 2 hours, then drain.
- In a pot, add the mutton, soaked chana dal, chopped onion, garlic, ginger, green chilies, cumin seeds, and salt. Cover with water and cook until the mutton and dal are tender (about 30-40 minutes).
- Once cooked, drain any excess water and let the mixture cool. Grind it into a smooth paste using a food processor.
- Transfer the ground mixture into a bowl and mix in the coriander powder, garam masala, fresh coriander leaves, lemon juice, and beaten egg (if using).
- Shape the mixture into small patties (kebabs).
- Heat oil in a frying pan over medium heat and shallow fry the kebabs until golden brown on both sides (about 3-4 minutes per side).
- Remove the kebabs from the pan and place them on a paper towel to absorb excess oil.
- Serve hot with mint chutney and lemon wedges.
