Ingredients

  • Mutton (boneless) - 300 grams
  • Split Bengal gram (chana dal) - 50 grams
  • Onion - 1 medium, chopped
  • Garlic - 4 cloves
  • Ginger - 1 inch piece
  • Green chilies - 2, chopped
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - 1 teaspoon
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Oil - for shallow frying
  • Egg - 1, beaten (optional for binding)

Steps

  1. Soak the chana dal in water for 2 hours, then drain.
  2. In a pot, add the mutton, soaked chana dal, chopped onion, garlic, ginger, green chilies, cumin seeds, and salt. Cover with water and cook until the mutton and dal are tender (about 30-40 minutes).
  3. Once cooked, drain any excess water and let the mixture cool. Grind it into a smooth paste using a food processor.
  4. Transfer the ground mixture into a bowl and mix in the coriander powder, garam masala, fresh coriander leaves, lemon juice, and beaten egg (if using).
  5. Shape the mixture into small patties (kebabs).
  6. Heat oil in a frying pan over medium heat and shallow fry the kebabs until golden brown on both sides (about 3-4 minutes per side).
  7. Remove the kebabs from the pan and place them on a paper towel to absorb excess oil.
  8. Serve hot with mint chutney and lemon wedges.
