- Lemon juice - 1 tablespoon
- Oil - 1 tablespoon (for greasing)
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- In a large mixing bowl, combine the mutton mince, chopped onion, ginger-garlic paste, green chilies, cilantro, garam masala, cumin powder, coriander powder, red chili powder, salt, black pepper, and lemon juice.
- Mix the ingredients thoroughly using your hands, ensuring that all spices are well incorporated into the meat.
- Cover the bowl with plastic wrap and let the mixture marinate in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Preheat your grill or oven to medium-high heat (about 200°C or 400°F).
- Take a handful of the marinated mutton mixture and mold it around a skewer, forming a cylindrical shape. Repeat for the remaining mixture and skewers.
- Brush the kebabs lightly with oil to prevent sticking, then place them on the grill.
- Cook the kebabs for about 10-12 minutes, turning occasionally until they are evenly cooked and have a nice char.
- Once cooked, remove the kebabs from the grill and let them rest for a few minutes before serving.
