- Mutton mince - 300 grams
- Basmati rice - 1 cup (200 grams)
- Onion - 1 medium, finely chopped
- Garlic - 4 cloves, minced
- Ginger - 1 inch, grated
- Green chilies - 2, finely chopped
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Black pepper - 1/2 teaspoon
- Fresh coriander - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Egg - 1, beaten
- Oil - 2 tablespoons
- Water - 2 cups (500 ml)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a mixing bowl, combine mutton mince, chopped onion, minced garlic, grated ginger, green chilies, coriander powder, cumin powder, garam masala, salt, black pepper, fresh coriander, lemon juice, and the beaten egg. Mix well until all ingredients are combined.
- Divide the mutton mixture into equal portions and shape each portion into long, cylindrical kebabs.
- Preheat a grill or tandoor. Brush the kebabs with oil and cook for about 10-12 minutes, turning occasionally, until they are cooked through and slightly charred.
- In a pot, heat 1 tablespoon of oil and add the soaked and drained basmati rice. Stir for 2-3 minutes to lightly toast the rice.
- Add 2 cups of water to the pot, bring it to a boil, then lower the heat, cover, and simmer for about 15-20 minutes until the rice is cooked and water is absorbed.
- Once the kebabs are done, remove them from the grill and let them rest for a few minutes.
- Fluff the rice with a fork and serve it on plates topped with the mutton seekh kebabs.
