Ingredients

  • Mutton mince - 300 grams
  • Onion (finely chopped) - 1 medium
  • Ginger-garlic paste - 1 tablespoon
  • Green chili (finely chopped) - 1 small
  • Cilantro leaves (chopped) - 2 tablespoons
  • Mint leaves (chopped) - 2 tablespoons
  • Garam masala - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Skewers (wooden or metal) - 4
  • Olive oil - 1 tablespoon for brushing

Steps

  1. In a large mixing bowl, combine the mutton mince, finely chopped onion, ginger-garlic paste, green chili, cilantro, mint leaves, garam masala, cumin powder, red chili powder, salt, and lemon juice.
  2. Mix the ingredients thoroughly until well combined. You may use your hands for better mixing.
  3. Cover the mixture and let it marinate in the refrigerator for at least 15 minutes to allow the flavors to meld.
  4. Preheat the grill or oven to medium-high heat (about 200°C or 400°F).
  5. Divide the marinated mutton mixture into four equal portions and shape each portion around a skewer, pressing firmly to form a long kebab.
  6. Brush the kebabs lightly with olive oil to prevent sticking.
  7. Place the skewers on the grill or in the oven and cook for about 10-12 minutes, turning occasionally, until the kebabs are cooked through and have a nice char.
  8. Remove from the grill and let them rest for a couple of minutes before serving.
