- Mutton (bone-in) - 300 grams
- Fresh spinach - 200 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Ginger-garlic paste - 1 tablespoon
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Cooking oil - 2 tablespoons
- Salt - to taste
- Water - as needed
- Lemon juice - 1 tablespoon
Steps
- Heat oil in a heavy-bottomed pot over medium heat and add cumin seeds. Once they begin to splutter, add the chopped onion and sauté until golden brown.
- Add the ginger-garlic paste and green chili, cooking for another 2-3 minutes until fragrant.
- Introduce the mutton to the pot and sear until browned on all sides, about 5-7 minutes.
- Stir in the turmeric and coriander powder, mixing well to coat the meat, and add the tomato puree. Cook for 5 minutes until the oil begins to separate from the mixture.
- Pour in enough water to cover the mutton, bring to a boil, then reduce heat to low, cover, and simmer for about 30-40 minutes until the mutton is tender.
- While the mutton is cooking, blanch the spinach in boiling water for 2 minutes, then transfer to ice water. Drain and blend into a smooth paste.
- Once the mutton is tender, add the spinach paste to the pot, season with salt, and stir well. Cook together for an additional 5-10 minutes.
- Sprinkle garam masala over the dish, add lemon juice, and mix. Serve hot with rice or naan.
