- Mutton (bone-in, cut into pieces) - 300 grams
- Basmati rice - 150 grams
- Onion (finely sliced) - 1 medium
- Tomato (chopped) - 1 medium
- Ginger-garlic paste - 1 tablespoon
- Yogurt - 2 tablespoons
- Garam masala - 1 teaspoon
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Cilantro (chopped) - 2 tablespoons
- Cooking oil - 2 tablespoons
- Water - 400 ml
Steps
- Heat the cooking oil in a heavy-bottomed pot over medium heat. Add cumin seeds and let them splutter.
- Add the sliced onions and sauté until golden brown.
- Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
- Add the chopped tomato, red chili powder, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften.
- Add the mutton pieces and cook for 5-7 minutes, stirring occasionally until the meat is browned.
- Mix in the yogurt, garam masala, and cook for another 5 minutes.
- Add water, cover the pot, and simmer on low heat for 30-35 minutes until the mutton is tender. Stir occasionally and add more water if necessary.
- While the mutton is cooking, rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 20 minutes, then drain.
- Once the mutton is cooked, add the soaked rice to the pot. Gently mix everything together, ensuring the rice is well-coated with the spices.
- Pour in 400 ml of water (or enough to cover the rice by about an inch), adjust salt, and bring to a boil. Cover the pot and reduce heat to low, cooking for 15-20 minutes until the rice is fluffy and the water is absorbed.
- Fluff the rice with a fork, garnish with chopped cilantro and serve hot.
