Ingredients

  • Mutton (bone-in, cut into pieces) - 300 grams
  • Basmati rice - 150 grams
  • Onion (finely sliced) - 1 medium
  • Tomato (chopped) - 1 medium
  • Ginger-garlic paste - 1 tablespoon
  • Yogurt - 2 tablespoons
  • Garam masala - 1 teaspoon
  • Red chili powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - to taste
  • Cilantro (chopped) - 2 tablespoons
  • Cooking oil - 2 tablespoons
  • Water - 400 ml

Steps

  1. Heat the cooking oil in a heavy-bottomed pot over medium heat. Add cumin seeds and let them splutter.
  2. Add the sliced onions and sauté until golden brown.
  3. Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
  4. Add the chopped tomato, red chili powder, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften.
  5. Add the mutton pieces and cook for 5-7 minutes, stirring occasionally until the meat is browned.
  6. Mix in the yogurt, garam masala, and cook for another 5 minutes.
  7. Add water, cover the pot, and simmer on low heat for 30-35 minutes until the mutton is tender. Stir occasionally and add more water if necessary.
  8. While the mutton is cooking, rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 20 minutes, then drain.
  9. Once the mutton is cooked, add the soaked rice to the pot. Gently mix everything together, ensuring the rice is well-coated with the spices.
  10. Pour in 400 ml of water (or enough to cover the rice by about an inch), adjust salt, and bring to a boil. Cover the pot and reduce heat to low, cooking for 15-20 minutes until the rice is fluffy and the water is absorbed.
  11. Fluff the rice with a fork, garnish with chopped cilantro and serve hot.
