- Garam masala - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon (adjust to taste)
- Salt - to taste
- Cilantro (for garnish) - a handful
- Olive oil - 2 tablespoons
- Water - 250 ml
Steps
- Heat olive oil in a heavy-bottomed pot over medium heat.
- Add the chopped onions and sauté until golden brown.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the diced mutton and brown on all sides for about 5-7 minutes.
- In a bowl, whisk together the yogurt, tomato puree, garam masala, coriander powder, cumin powder, turmeric powder, red chili powder, and salt.
- Add this yogurt mixture to the pot, stirring well to coat the mutton evenly.
- Pour in the water, bring to a boil, then reduce heat to low and cover the pot.
- Simmer for 45 minutes to 1 hour, or until the mutton is tender and the flavors are well combined.
- Garnish with chopped cilantro before serving.
