- Basmati rice - 150 grams
- Mutton (bone-in pieces) - 300 grams
- Onion (sliced) - 1 medium
- Ginger-garlic paste - 1 tablespoon
- Green chilies (slit) - 2
- Bay leaves - 2
- Cinnamon stick - 1 inch
- Cloves - 4
- Cardamom pods - 4
- Cumin seeds - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - 1 teaspoon (or to taste)
- Cooking oil - 2 tablespoons
- Water - 400 ml
- Fresh coriander leaves (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat the cooking oil over medium heat and add the sliced onions. Fry until golden brown.
- Add the ginger-garlic paste and green chilies to the pot. Sauté for 2-3 minutes until fragrant.
- Add the mutton pieces and cook until they are browned on all sides, about 5-7 minutes.
- Add the bay leaves, cinnamon stick, cloves, cardamom pods, and cumin seeds. Stir well to combine the spices with the mutton.
- Pour in the water and add salt. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 30 minutes until the mutton is tender.
- Once the mutton is cooked, remove the lid and add the soaked and drained basmati rice to the pot. Add garam masala and stir gently to combine.
- Add more water if necessary, ensuring that the rice is just submerged. Cover the pot and cook on low heat for an additional 15 minutes, or until the rice is cooked and the water is absorbed.
- Remove from heat and let it rest covered for 5 minutes. Fluff the rice with a fork and garnish with fresh coriander leaves and a squeeze of lemon juice before serving.
