Ingredients
- Mutton (bone-in pieces) - 500 grams
- Basmati rice - 1 cup (200 grams)
- Onion (thinly sliced) - 1 medium
- Ginger-garlic paste - 1 tablespoon
- Nihari spice mix - 2 tablespoons
- Ghee or oil - 3 tablespoons
- Water - 3 cups
- Salt - to taste
- Fresh coriander (chopped) - for garnish
- Lemon wedges - for serving
Steps
- Heat ghee or oil in a heavy-bottomed pot over medium heat. Add the sliced onions and sauté until golden brown.
- Add the ginger-garlic paste to the pot and cook for another 2 minutes until fragrant.
- Add the mutton pieces to the pot and sear them until browned on all sides.
- Stir in the Nihari spice mix and salt, coating the mutton evenly with the spices.
- Pour in 3 cups of water and bring to a boil. Reduce the heat to low, cover, and let it simmer for about 90 minutes, or until the mutton is tender.
- While the mutton is cooking, rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a separate pot, bring 2 cups of water to a boil. Add the soaked rice and cook until the rice is 70% done (about 5-7 minutes). Drain and set aside.
- Once the mutton is tender, add the partially cooked rice on top of the mutton gravy. Cover and cook on low heat for another 15 minutes to allow the flavors to meld.
- Gently fluff the rice with a fork before serving. Garnish with fresh coriander and serve with lemon wedges on the side.
