Ingredients

  • Mutton (bone-in pieces) - 500 grams
  • Onion (sliced) - 1 medium (150 grams)
  • Ginger-garlic paste - 1 tablespoon
  • Ghee (clarified butter) - 3 tablespoons
  • Wheat flour - 1 tablespoon
  • Water - 600 ml
  • Nihari spice mix - 2 tablespoons
  • Salt - to taste
  • Fresh cilantro (chopped) - for garnish
  • Lemon wedges - for serving

Steps

  1. In a heavy-bottomed pot, heat ghee over medium heat. Add the sliced onions and sauté until golden brown.
  2. Add the ginger-garlic paste and sauté for another 2-3 minutes until fragrant.
  3. Stir in the mutton pieces and cook until they are browned on all sides.
  4. Sprinkle the nihari spice mix and salt over the mutton, mixing well to coat the meat.
  5. Add the wheat flour to the pot and stir for about 2 minutes to toast the flour.
  6. Pour in the water, bring it to a boil, then reduce the heat to low. Cover and simmer for about 2-3 hours, or until the mutton is tender.
  7. Once cooked, adjust the seasoning if necessary and garnish with fresh cilantro.
  8. Serve hot with lemon wedges and your choice of naan or rice.
