Ingredients
- Mutton (bone-in pieces) - 500 grams
- Onion (sliced) - 1 medium (150 grams)
- Ginger-garlic paste - 1 tablespoon
- Ghee (clarified butter) - 3 tablespoons
- Wheat flour - 1 tablespoon
- Water - 600 ml
- Nihari spice mix - 2 tablespoons
- Salt - to taste
- Fresh cilantro (chopped) - for garnish
- Lemon wedges - for serving
Steps
- In a heavy-bottomed pot, heat ghee over medium heat. Add the sliced onions and sauté until golden brown.
- Add the ginger-garlic paste and sauté for another 2-3 minutes until fragrant.
- Stir in the mutton pieces and cook until they are browned on all sides.
- Sprinkle the nihari spice mix and salt over the mutton, mixing well to coat the meat.
- Add the wheat flour to the pot and stir for about 2 minutes to toast the flour.
- Pour in the water, bring it to a boil, then reduce the heat to low. Cover and simmer for about 2-3 hours, or until the mutton is tender.
- Once cooked, adjust the seasoning if necessary and garnish with fresh cilantro.
- Serve hot with lemon wedges and your choice of naan or rice.
