Ingredients
- Mutton (bone-in, cut into pieces) - 500 grams
- Onion (finely sliced) - 1 large
- Ginger-garlic paste - 2 tablespoons
- Yogurt (plain) - 100 grams
- Nihari spice mix - 2 tablespoons
- Ghee or oil - 3 tablespoons
- Water - 4 cups
- Salt - to taste
- Fresh coriander (chopped) - for garnish
- Lemon wedges - for serving
- Basmati rice - 1 cup (uncooked)
Steps
- In a large pot, heat ghee or oil over medium heat. Add finely sliced onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for 2 minutes until fragrant.
- Stir in the mutton pieces and cook until they are browned on all sides.
- Add the Nihari spice mix and salt, mixing well to coat the mutton.
- Pour in the yogurt and mix until well incorporated. Cook for another 5 minutes.
- Add 4 cups of water, bring to a boil, then reduce heat to low, cover, and simmer for 2 to 3 hours until the mutton is tender.
- Meanwhile, rinse the basmati rice under cold water until the water runs clear. Cook the rice according to package instructions.
- Once the mutton is tender, taste and adjust seasoning if necessary.
- Serve the mutton curry over the cooked basmati rice in bowls, garnished with fresh coriander and lemon wedges.
