Ingredients

  • Mutton (bone-in, cut into pieces) - 500 grams
  • Onion (finely sliced) - 1 large
  • Ginger-garlic paste - 2 tablespoons
  • Yogurt (plain) - 100 grams
  • Nihari spice mix - 2 tablespoons
  • Ghee or oil - 3 tablespoons
  • Water - 4 cups
  • Salt - to taste
  • Fresh coriander (chopped) - for garnish
  • Lemon wedges - for serving
  • Basmati rice - 1 cup (uncooked)

Steps

  1. In a large pot, heat ghee or oil over medium heat. Add finely sliced onions and sauté until golden brown.
  2. Add ginger-garlic paste and sauté for 2 minutes until fragrant.
  3. Stir in the mutton pieces and cook until they are browned on all sides.
  4. Add the Nihari spice mix and salt, mixing well to coat the mutton.
  5. Pour in the yogurt and mix until well incorporated. Cook for another 5 minutes.
  6. Add 4 cups of water, bring to a boil, then reduce heat to low, cover, and simmer for 2 to 3 hours until the mutton is tender.
  7. Meanwhile, rinse the basmati rice under cold water until the water runs clear. Cook the rice according to package instructions.
  8. Once the mutton is tender, taste and adjust seasoning if necessary.
  9. Serve the mutton curry over the cooked basmati rice in bowls, garnished with fresh coriander and lemon wedges.
