Ingredients
- Mutton (bone-in, cut into pieces) - 300 grams
- Basmati rice - 150 grams
- Onion (sliced) - 1 medium (150 grams)
- Ginger-garlic paste - 1 tablespoon
- Nihari spice mix - 2 teaspoons
- Yogurt - 100 grams
- Ghee or clarified butter - 2 tablespoons
- Water - 500 ml
- Salt - to taste
- Fresh coriander (chopped) - 2 tablespoons
- Fresh mint leaves (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
- Green chili (slit) - 1
- Fried onions - for garnish (optional) - 2 tablespoons
Steps
- In a heavy-bottomed pot, heat ghee on medium heat and add sliced onions. Fry until they are golden brown.
- Add ginger-garlic paste and sauté for 2-3 minutes until the raw smell disappears.
- Add the mutton pieces and sear them until they are browned on all sides.
- Stir in the Nihari spice mix and salt, cooking for another 2 minutes to release the flavors.
- Add yogurt and mix well, then pour in 500 ml of water. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 1 hour or until the mutton is tender.
- While the mutton is cooking, soak the basmati rice in water for 30 minutes, then drain.
- Once the mutton is tender, add the soaked rice on top of the mutton mixture, along with green chili, chopped coriander, and mint leaves.
- Pour enough water (around 250 ml) to just cover the rice, add lemon juice, and adjust salt if necessary.
- Cover the pot tightly and cook on low heat for about 30-35 minutes until the rice is fully cooked and has absorbed all the flavors.
- Remove from heat, let it rest for 10 minutes, then fluff the biryani gently. Serve hot, garnished with fried onions if desired.
