Ingredients

  • Mutton (bone-in, cut into pieces) - 300 grams
  • Basmati rice - 150 grams
  • Onion (sliced) - 1 medium (150 grams)
  • Ginger-garlic paste - 1 tablespoon
  • Nihari spice mix - 2 teaspoons
  • Yogurt - 100 grams
  • Ghee or clarified butter - 2 tablespoons
  • Water - 500 ml
  • Salt - to taste
  • Fresh coriander (chopped) - 2 tablespoons
  • Fresh mint leaves (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Green chili (slit) - 1
  • Fried onions - for garnish (optional) - 2 tablespoons

Steps

  1. In a heavy-bottomed pot, heat ghee on medium heat and add sliced onions. Fry until they are golden brown.
  2. Add ginger-garlic paste and sauté for 2-3 minutes until the raw smell disappears.
  3. Add the mutton pieces and sear them until they are browned on all sides.
  4. Stir in the Nihari spice mix and salt, cooking for another 2 minutes to release the flavors.
  5. Add yogurt and mix well, then pour in 500 ml of water. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 1 hour or until the mutton is tender.
  6. While the mutton is cooking, soak the basmati rice in water for 30 minutes, then drain.
  7. Once the mutton is tender, add the soaked rice on top of the mutton mixture, along with green chili, chopped coriander, and mint leaves.
  8. Pour enough water (around 250 ml) to just cover the rice, add lemon juice, and adjust salt if necessary.
  9. Cover the pot tightly and cook on low heat for about 30-35 minutes until the rice is fully cooked and has absorbed all the flavors.
  10. Remove from heat, let it rest for 10 minutes, then fluff the biryani gently. Serve hot, garnished with fried onions if desired.
