- Mutton (bone-in, cut into pieces) - 300 grams
- Basmati rice - 1 cup (200 grams)
- Onion (finely sliced) - 1 medium
- Tomato (chopped) - 1 medium
- Yogurt - 100 grams
- Ginger-garlic paste - 1 tablespoon
- Garam masala - 1 teaspoon
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Cardamom pods - 2
- Cloves - 2
- Cinnamon stick - 1 small piece
- Cooking oil (or ghee) - 3 tablespoons
- Salt - to taste
- Cilantro (chopped) - for garnish
- Water - 3 cups
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak in water for 30 minutes.
- In a large pot, heat the cooking oil over medium heat. Add cumin seeds, cardamom pods, cloves, and cinnamon stick. Sauté for a minute until fragrant.
- Add the sliced onions and sauté until they turn golden brown.
- Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
- Add the mutton pieces and sauté for about 5-7 minutes until the meat is browned on all sides.
- Mix in the chopped tomato, red chili powder, turmeric powder, and salt. Cook until the tomatoes soften.
- Add the yogurt, stirring well to combine. Cook on low heat for about 10 minutes until the mutton is tender and cooked through.
- Add the garam masala and mix well. If the mixture is too thick, add a little water to reach your desired consistency.
- In a separate pot, bring 3 cups of water to a boil. Add the soaked basmati rice and a little salt. Cook until the rice is 70% done, then drain the water.
- Layer the partially cooked rice over the mutton korma, cover the pot, and cook on low heat for another 15-20 minutes until the rice is fully cooked and fluffy.
- Garnish with chopped cilantro before serving.
