Ingredients

  • Mutton (bone-in, cut into pieces) - 300 grams
  • Basmati rice - 1 cup (200 grams)
  • Onion (finely sliced) - 1 medium
  • Tomato (chopped) - 1 medium
  • Yogurt - 100 grams
  • Ginger-garlic paste - 1 tablespoon
  • Garam masala - 1 teaspoon
  • Red chili powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Cardamom pods - 2
  • Cloves - 2
  • Cinnamon stick - 1 small piece
  • Cooking oil (or ghee) - 3 tablespoons
  • Salt - to taste
  • Cilantro (chopped) - for garnish
  • Water - 3 cups

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak in water for 30 minutes.
  2. In a large pot, heat the cooking oil over medium heat. Add cumin seeds, cardamom pods, cloves, and cinnamon stick. Sauté for a minute until fragrant.
  3. Add the sliced onions and sauté until they turn golden brown.
  4. Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
  5. Add the mutton pieces and sauté for about 5-7 minutes until the meat is browned on all sides.
  6. Mix in the chopped tomato, red chili powder, turmeric powder, and salt. Cook until the tomatoes soften.
  7. Add the yogurt, stirring well to combine. Cook on low heat for about 10 minutes until the mutton is tender and cooked through.
  8. Add the garam masala and mix well. If the mixture is too thick, add a little water to reach your desired consistency.
  9. In a separate pot, bring 3 cups of water to a boil. Add the soaked basmati rice and a little salt. Cook until the rice is 70% done, then drain the water.
  10. Layer the partially cooked rice over the mutton korma, cover the pot, and cook on low heat for another 15-20 minutes until the rice is fully cooked and fluffy.
  11. Garnish with chopped cilantro before serving.
