- Mutton (bone-in, cut into pieces) - 500 grams
- Onion (finely sliced) - 1 medium (150 grams)
- Ginger-garlic paste - 1 tablespoon
- Yogurt (plain, thick) - 150 grams
- Ghee or vegetable oil - 3 tablespoons
- Cashew nuts - 30 grams
- Green cardamom pods - 3
- Cloves - 4
- Cinnamon stick - 1 inch
- Bay leaf - 1
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Fresh coriander leaves (chopped) - for garnish
Steps
- In a blender, grind the cashew nuts with a little water to form a smooth paste. Set aside.
- Heat ghee or oil in a heavy-bottomed pot over medium heat. Add the sliced onions and sauté until golden brown.
- Add the ginger-garlic paste and sauté for another 2 minutes until fragrant.
- Add the mutton pieces to the pot and sear until browned on all sides.
- Stir in the green cardamom, cloves, cinnamon stick, and bay leaf, cooking for an additional minute.
- Add the red chili powder, turmeric powder, coriander powder, and salt. Mix well to coat the mutton with the spices.
- Reduce the heat to low and add the yogurt, mixing thoroughly to combine. Cook for 5 minutes.
- Add the cashew paste to the pot and stir well. Pour in 1 cup of water, cover, and let it simmer on low heat for about 60 minutes, or until the mutton is tender.
- Once cooked, sprinkle garam masala over the curry and mix. Allow it to simmer for an additional 5 minutes.
- Garnish with fresh coriander leaves before serving.
