Ingredients

  • Mutton (bone-in, cut into pieces) - 500 grams
  • Onion (finely sliced) - 1 medium (150 grams)
  • Ginger-garlic paste - 1 tablespoon
  • Yogurt (plain, thick) - 150 grams
  • Ghee or vegetable oil - 3 tablespoons
  • Cashew nuts - 30 grams
  • Green cardamom pods - 3
  • Cloves - 4
  • Cinnamon stick - 1 inch
  • Bay leaf - 1
  • Red chili powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Fresh coriander leaves (chopped) - for garnish

Steps

  1. In a blender, grind the cashew nuts with a little water to form a smooth paste. Set aside.
  2. Heat ghee or oil in a heavy-bottomed pot over medium heat. Add the sliced onions and sauté until golden brown.
  3. Add the ginger-garlic paste and sauté for another 2 minutes until fragrant.
  4. Add the mutton pieces to the pot and sear until browned on all sides.
  5. Stir in the green cardamom, cloves, cinnamon stick, and bay leaf, cooking for an additional minute.
  6. Add the red chili powder, turmeric powder, coriander powder, and salt. Mix well to coat the mutton with the spices.
  7. Reduce the heat to low and add the yogurt, mixing thoroughly to combine. Cook for 5 minutes.
  8. Add the cashew paste to the pot and stir well. Pour in 1 cup of water, cover, and let it simmer on low heat for about 60 minutes, or until the mutton is tender.
  9. Once cooked, sprinkle garam masala over the curry and mix. Allow it to simmer for an additional 5 minutes.
  10. Garnish with fresh coriander leaves before serving.
