- Mutton (bone-in, cut into pieces) - 400 grams
- Onion (finely chopped) - 1 large (150 grams)
- Ginger-garlic paste - 1 tablespoon
- Yogurt (plain, thick) - 100 grams
- Tomato (pureed) - 1 medium (100 grams)
- Cooking oil - 3 tablespoons
- Garam masala - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Salt - to taste
- Fresh coriander leaves (chopped) - for garnish
- Water - 300 ml
Steps
- Heat the cooking oil in a heavy-bottomed pan over medium heat. Add the chopped onions and sauté until they turn golden brown.
- Add the ginger-garlic paste to the onions and sauté for an additional 2 minutes until fragrant.
- Stir in the mutton pieces and cook on high heat for about 5-7 minutes, browning the meat on all sides.
- Add the pureed tomato, along with turmeric, coriander, cumin, red chili powder, and salt. Mix well and cook for another 5 minutes until the oil separates from the mixture.
- Reduce the heat to low and add the yogurt, stirring continuously to avoid curdling. Cook for 5 minutes.
- Pour in the water, cover the pan, and let it simmer on low heat for 40-45 minutes, or until the mutton is tender.
- Once the mutton is cooked, stir in the garam masala and cook for an additional 5 minutes.
- Garnish with fresh coriander leaves before serving.
