Ingredients

  • Basmati rice - 100 grams
  • Split yellow moong dal - 50 grams
  • Mutton (bone-in, cut into pieces) - 200 grams
  • Onion - 1 medium, finely sliced
  • Tomato - 1 medium, chopped
  • Ginger-garlic paste - 1 tablespoon
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Bay leaf - 1
  • Cinnamon stick - 1 inch
  • Cloves - 2
  • Black pepper - 4
  • Salt - to taste
  • Oil or ghee - 2 tablespoons
  • Water - 500 ml

Steps

  1. Rinse the basmati rice and moong dal under cold water until the water runs clear; soak them together in water for 30 minutes, then drain.
  2. In a heavy-bottomed pot, heat oil or ghee over medium heat. Add cumin seeds, bay leaf, cinnamon stick, cloves, and black pepper; sauté for about 1 minute until fragrant.
  3. Add the sliced onion and green chili, and sauté until the onions are golden brown.
  4. Stir in the ginger-garlic paste and chopped tomato; cook until the tomatoes soften.
  5. Add the mutton pieces to the pot, followed by turmeric powder and salt. Sear the mutton for about 5-7 minutes until it is browned on all sides.
  6. Pour in 500 ml of water, bring it to a boil, then reduce the heat to low. Cover and simmer for about 30 minutes until the mutton is tender.
  7. Once the mutton is cooked, add the soaked rice and moong dal to the pot, stirring gently to combine.
  8. Increase the heat to medium and bring the mixture to a boil. Then, reduce the heat again, cover, and let it simmer for another 15-20 minutes until the rice and dal are fully cooked and the water is absorbed.
  9. Finally, sprinkle garam masala over the khichdi, fluff it gently with a fork, and let it sit covered for 5 minutes before serving.
