- Mutton (bone-in, chopped) - 500 grams
- Onion (finely sliced) - 1 medium
- Tomato (chopped) - 2 medium
- Green bell pepper (sliced) - 1 medium
- Ginger-garlic paste - 1 tablespoon
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Cooking oil - 3 tablespoons
- Fresh coriander leaves (chopped) - for garnish
Steps
- Heat the cooking oil in a kadhai or heavy-bottomed pan over medium heat.
- Add cumin seeds and let them splutter.
- Add the sliced onions and sauté until they turn golden brown.
- Stir in the ginger-garlic paste and sauté for another 1-2 minutes until the raw smell disappears.
- Add the chopped tomatoes and cook until they soften and the oil starts to separate.
- Mix in the coriander powder, red chili powder, turmeric powder, and salt. Cook for 2-3 minutes.
- Add the mutton pieces and sear them on high heat for about 5-7 minutes until they are browned on all sides.
- Pour in enough water to cover the mutton, bring it to a boil, then reduce the heat to low, cover, and simmer for about 40 minutes or until the mutton is tender.
- Once the mutton is cooked, add the sliced green bell pepper and garam masala. Cook uncovered for another 5 minutes.
- Garnish with fresh coriander leaves and serve hot with roti or rice.
