- Mutton (bone-in) - 400 grams
- Onions - 3 medium (approximately 300 grams)
- Ginger-garlic paste - 1 tablespoon
- Tomatoes - 1 medium (approximately 100 grams)
- Yogurt - 100 grams
- Cooking oil - 3 tablespoons
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Fresh coriander leaves - for garnish
- Water - 1 cup
Steps
- Slice 2 onions thinly and chop 1 onion finely. Heat oil in a heavy-bottomed pot over medium heat and add cumin seeds.
- Once the cumin seeds splutter, add the sliced onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for another 2 minutes until the raw smell disappears.
- Add the mutton pieces and cook until they are browned on all sides.
- Stir in the finely chopped onion, coriander powder, red chili powder, turmeric powder, and salt. Cook for 5 minutes.
- Add chopped tomatoes and yogurt, mix well, and cook until the tomatoes soften.
- Pour in water, bring to a boil, then reduce heat to low, cover, and let it simmer for 40 minutes or until the mutton is tender.
- Add garam masala towards the end of cooking, mix well, and remove from heat.
- Garnish with fresh coriander leaves and serve hot with rice or naan.
