Ingredients

  • Basmati rice - 200 grams
  • Mutton (bone-in, cut into pieces) - 300 grams
  • Onion (thinly sliced) - 2 medium
  • Tomato (chopped) - 1 medium
  • Ginger-garlic paste - 1 tablespoon
  • Biryani masala - 2 tablespoons
  • Yogurt - 100 grams
  • Fresh coriander leaves (chopped) - 2 tablespoons
  • Fresh mint leaves (chopped) - 2 tablespoons
  • Green chilies (slit) - 2
  • Ghee (clarified butter) - 3 tablespoons
  • Cooking oil - 2 tablespoons
  • Whole spices (bay leaf, cardamom, cloves, cinnamon stick) - 1 each
  • Salt - to taste
  • Water - 500 ml
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice in cold water until the water runs clear, then soak it for 30 minutes.
  2. In a large pot, heat ghee and oil over medium heat. Add sliced onions and sauté until golden brown.
  3. Add ginger-garlic paste and sauté for 2 minutes until fragrant.
  4. Add the mutton pieces and cook until they are browned on all sides.
  5. Stir in chopped tomatoes, biryani masala, and salt. Cook for 5 minutes until tomatoes soften.
  6. Add yogurt, green chilies, chopped coriander, and mint leaves. Mix well and cover, cooking on low heat for 15 minutes.
  7. In another pot, bring 500 ml of water to a boil. Add soaked rice and cook until it's 70% done, then drain.
  8. Layer the partially cooked rice over the mutton mixture. Squeeze lemon juice on top and sprinkle some more chopped mint and coriander.
  9. Cover the pot tightly and cook on low heat for another 30 minutes, allowing flavors to meld and rice to fully cook.
  10. Once done, fluff the biryani gently with a fork before serving.
